Salmon Bites with Avocado (Printable Version)

# What You'll Need:

→ Meatballs

01 - 1 lb skinless salmon fillet, finely diced
02 - 1/2 cup breadcrumbs
03 - 1 egg, gently whisked
04 - 2 tablespoons chopped fresh parsley
05 - 1 teaspoon garlic powder
06 - 1/2 teaspoon paprika
07 - Salt and pepper to taste
08 - 1 tablespoon olive oil, for cooking

→ Avocado Sauce

09 - 1 ripe avocado
10 - 1/4 cup sour cream
11 - 1 tablespoon lemon juice
12 - 1 clove garlic, finely chopped
13 - Salt and pepper to taste

# How to Make It:

01 - Set your oven to 375°F (190°C). Lightly coat a baking tray with olive oil or cooking spray.
02 - Put the diced salmon, breadcrumbs, whisked egg, parsley, garlic powder, paprika, salt, and pepper in a big bowl. Stir everything together thoroughly.
03 - Roll the salmon mix into small, tablespoon-sized balls and put them on your greased tray. Add a light drizzle of olive oil and bake for 12-15 mins until they're firm and hit 145°F (63°C) inside.
04 - Mix the avocado, sour cream, lemon juice, chopped garlic, salt, and pepper in a blender until you get a smooth, creamy mix.
05 - Put the hot salmon balls on a plate and top with the creamy avocado sauce. Add extra parsley on top if you want.
