Potato Balls Snack (Printable Version)

01 - 2 cups soft potato mash
02 - 1/2 cup shredded cheddar
03 - 1/4 cup snipped chives
04 - 1/4 cup crispy bacon bits
05 - 1 egg, whisked up
06 - 1/2 cup bread coating
07 - Pinch of salt and pepper
08 - Cooking oil spray

# How to Make It:

01 - Get your oven hot at 400°F (200°C) and put some baking paper on your tray.
02 - Dump your potato mash in a big bowl with the shredded cheddar, snipped chives, bacon bits, whisked egg, salt and pepper. Stir it all up good.
03 - Take small handfuls and roll them into golf ball shapes, then coat each one in the bread crumbs.
04 - Arrange your coated balls on the paper-lined tray and give them a light spray with cooking oil.
05 - Stick the tray in your hot oven for about 20-25 minutes until they turn golden and crispy outside.
06 - Let them sit for a bit before you dig in. They're amazing!

# Additional Tips:

01 - Skip the bacon and toss in some cooked chopped mushrooms if you don't eat meat.
02 - Swap in non-gluten bread coating if you can't handle wheat.
03 - Try fresh dill or parsley, or switch up your cheese type for different tastes.
04 - Want extra crunch? Roll those balls twice in bread coating before they hit the oven.
