Get your oven hot at 400°F (200°C) and put some baking paper on your tray.

Dump your potato mash in a big bowl with the shredded cheddar, snipped chives, bacon bits, whisked egg, salt and pepper. Stir it all up good.

Take small handfuls and roll them into golf ball shapes, then coat each one in the bread crumbs.

Arrange your coated balls on the paper-lined tray and give them a light spray with cooking oil.

Stick the tray in your hot oven for about 20-25 minutes until they turn golden and crispy outside.

Let them sit for a bit before you dig in. They're amazing!
